These are little tasty low carb nuggets that are an ease to make and an ease to scoff down before you’ve had a chance to make a tasty dip to go alongside!
I got the original recipe from unbound wellness but I’ve changed the recipe slightly as her’s were too coconutty for me and they tasted cross between savoury and sweet which I found odd. I use cassava flour instead of the coconut flour which works better for me.
Ingredients:
1 x cauliflower (riced)
1/3 cup cassava flour
2 tbs melted coconut oil
1/8 tsp baking soda
2 tsp onion powder
2 tsp garlic powder
1/2 tsp paprika
salt & pepper
2 eggs
Mix all the above except eggs in a mixing bowl then break in the eggs and mix well. Lightly grease parchment paper on a flat baking tray. Use a 2 inch pastry cutter or ring, and fill with mix to shape.
Bake at 200 degrees for 15 mins then turn over for another 5-10 mins.
Make a dip (possibly).
Scoff!
