These were my first experimentation with tigernut flour. Turned out to be a great weekend breakfast treat. I got the basic recipe from the roasted root website. I never have any kind of milk in the house but I do make my own coconut concentrate so tend to heat that in water if I need to use a milk of some kind. So I used one ripe banana with a little of the coconut milk and blended that into the flour. Its a quick whip it all up together recipe (or bung it in a blender), and you have pancake batter in minutes.
A ripe banana, two eggs, some flour, some vanilla or cinammon et voila….
