sweet potato and ham egg muffins

Im in love with these. Such a fast and easy weekday breakfast solution. Make a batch on Sunday and grab and go out the fridge for the next few days (if they hang around that long!). Hopefully you can eat eggs. If not, you’re screwed.

I took the recipe from the godmother of AIP, Sarah Ballantyne from her site the paleo mom. Basically it’s the mecca for all things AIP. I now mix up the recipe to my fancy, I love a bit of pulled ham hock or sausage in there, always add some onion, occasional white sweet potato or mushrooms.
