These little beauties were made up after reading every other week sweet potato cookie recipe out there and me not being able to make my mind up on what one to make. The main idea for them eventually came from healingfamilyeats but I didn’t have palm shortening so substituted red palm oil instead (not quite as much) and used some ground toasted coconut flakes instead of the desiccated coconut. I used purple skinned white sweet potatoes. It all worked a treat!
