Pickled beets. I love them! After discovering in M&S, their new horseradish rosebud beetroots – I had to try and make my own as theirs has sugar in them – although I figure a bit of sugar in the beetroot vinegar is better than a mars bar right?!
Pickling beetroot is so easy and you can experiment with the flavours/spices you use.
Ive also recently stared to grow my own which is amazing! You get to use the green tops too so plenty of beet green soup being made in my kitchen. Win win!!
