It’s the first question I’m asked – what do you eat?! So this is a look at what exactly I do eat!
So for BREAKFAST I had the following:
Some people will not like the idea of a kale smoothie but it tastes so good and is REALLY good for you! Just remember that part and get it down you! Drinking your greens is a really good way to take in more veg. I pack in about 4-5 cups of vegetables into my morning smoothie.
To make a good smoothie you have to have a good blender, even better still, I find a Nutribullet works wonders at turning all your greens into a smooth creamy drink without leaving any stringy bits.

I blend my veg with coconut water as I think it tastes better than regular filtered water. I sometimes add extra spinach on top, just for more green power and will then add half an apple or half a banana, maybe a little ginger and definitely a tablespoon of gelatin powder. I usually have my breakfast after a work out at the gym so the gelatin is a good protein boost and AIP compliant! You can make up your own recipes with whatever veg you like.
Be sure to drink up your greens quickly after blending to maximise getting all the nutrients out of it – within 20 minutes. Im finding it harder to get organic kale as we head into summer – but a few supermarkets have it (grown in Spain) or I have found my local farmers market still has curly kale. You can always order your veg online if you find it hard to source good organic produce.
Remember before you screw your nose up at the thought of kale…it is packed with Vitamin C, has the most Vitamin A of all the greens and packs in a lot of Calcium too. It’s also full of flavonoids which combine both antioxidant and anti-inflammatory benefits.
