AIP Pesto is so easy to make and just as good as regular pesto. You will need some kind of food processor – I use a Cusinart which is so handy for chopping and blitzing so many things. Try this simple recipe below and then change up the quantities till you get a pesto YOU love. I like a runny pesto so I use a lot of oil, I like it garlicky too! But you can add less or more of the ingredients, maybe even freestyle with adding some other greens such as spinach, parsley or coriander. If you have never tried nutritional yeast before then you should get some in for making this pesto.

All you need for basic pesto is the below:

50 grams basil leaves

2 garlic cloves

4 tbs nutritional yeast

4-5 tbs olive oil

Place the basil, garlic and nutritional yeast into the processor and blitz to a paste. Then add the oil. Blitz some more! Pour into a glass jar and stop in the fridge. This solidifies in the fridge but soon melts as you put a dollop onto something hot. Great with veggies, or courgette noodles and eggs if you eat those.
