These breakfast waffles are so quick and easy to make, and are so good, you can eat them whenever!
The main thing here is to buy a silicon waffle mould, unless I guess you own a waffle iron, but I have only tried baking them.
These are great with fruit, bacon, maple syrup, coyo, or just au naturale. Mmmmmmm!!
Ingredients:
1 cup cassava flour
1 green plantain
2 organic free range eggs
1/2 cup coconut oil
Pinch of sea salt
1 tsp baking powder
Heat oven to 160 degrees.
Mix all the above in a blender/food processor until you have smooth batter, maybe add more oil if needed.
Pour into your waffle mould.
Bake for 20 mins or until golden brown. Remove from mould to cool.
Eat!!!
