Bread, bread, bread. I just love it. If I’m ever to fall off the AIP diet it usually has something to do with it’s hot, crusty and buttery goodness!
So when you find an alternative that subs that nawtiness then excitement prevails and you just gotta make it.
Ottos cassava flour is a game changer. I was buying cassava flour here in the UK from time and thought this works – but then I had Ottos and WOW! It’s so good! Suddenly taco night was on the menu, pies were back in town and now pitta breads!
I followed the video tutorial on the website and this is the outcome of my first attempt. Fluffy pitta pockets that I could stuff. I also cooked some thinner that worked as great flatbreads to slather with liver pate.
I only hope you can get this magic flour in the UK soon – currently I have to harrang anyone I know traveling to or from the US to bring me a bag, and once it goes, I’m a mess.
