I love avocados. I eat a lot in a week – with breakfast, with salads, in smoothies – I LOVE THEM IN SMOOTHIES!!
But today I had a sweet craving so I knocked up this easy brownie recipe.
Ingredients:
3/4 cup of cassava flour
1/2 cup organic cocoa powder
1/4 tsp salt
1/4 tsp bicarbonate of soda
1 ripe avocado
1/2 cup coconut sugar
2 large organic free range eggs
1/2 cup coconut oil (melted)
Heat oven to 170 degrees
Mix flour, cocoa, salt and bicarbonate of soda in a bowl.
In a blender, mix avocado, sugar, oil, and eggs (in that order).
Mix the wet mixture into the flour/cocoa and stir well.
Grease a small 8 inch tin (I used avocado oil) ad spoon in the mixture. Bake for 20 mins.
I also knocked up some avocado frosting, as you can’t get enough avocado!!
1 ripe avocado
1/2 cup (or slightly less) of maple syrup
1/2 cup organic cocoa powder (add slowly to taste)
