I will resist the pancake – although the paleo mom has a great recipe for plantain pancakes which I like, but today I tried her plantain and apple fritters which I LOVE!

So easy to make too – mash a couple of ripe plantains (riper the better) add a grated apple into the mix with half a teaspoon of cinnamon. Mix up the batter and dollop into a frying pan with some coconut oil. This is the tricky bit though. Make them small enough to flip easily, as they fall apart with ease. Slowly cook them, about eight minutes a side.
