So everyone spirallizing is causing a courgette crisis – yikes! But I think squash stocks are safe. All supermarkets are selling premade courgetti along with squash spaghetti and lasagne sheets. Well I was excited to see this latest addition, squash WAFFLES, in my local Sainsbury’s. Bung them in the oven, cook up some pancetta and then douse in maple syrup!
