I bought some Mighty Bee coconut meat in Planet Organic last week without knowing what to do with it! Mighty Bee coconut water is so good I thought the coconut has to be good too!
I then decided to make some kind of sweet treat with it. I am finding it hard to fight sweet temptation at the moment so needed something to settle those cravings.
I purchased some of these ice pop molds and the next day I gots creative!
I made two different kinds of ice pops – mango/coconut and date/coconut.
The mango ones were a doddle – I simply blitzed up some slightly defrosted frozen mango and added coconut water and a bit of lime zest. That was it, job done!
For the date/coconut flavour, I first defrosted half of the coconut meat (it comes frozen) and whilst waiting on that, I gently heated up half a can of light coconut milk in a saucepan and added in 4 medjool dates, some vanilla (optional) and a teaspoon of honey. Let that cool then blend it up along with the coconut meat.
Pour into the molds and freeze.
