When I first made these, I stuffed my face with them for days.
Try to have some control people.
Even though in theory if you’re eating the right foods you shouldn’t really get peckish in between meals but sometimes the mind overrides the stomach and in certain situations you just want something BAD!
So instead of falling off and reaching for the biscuits, go for something like these muffins. You can mix up the ingredients and experiment once you have nailed the basic recipe.
Ingredients:
- 1 large roasted sweet potato (cold)
- 5 medjool dates (or any organic dates)
- 3 tbs condensed coconut
- small can of coconut cream or milk
- 2 tbs coconut oil
- 6 tbs coconut flour
- raisins/sultanas – optional
- orange zest
- 1 tsp vanilla – optional
Preheat over to 160 degrees fan.
Heat the oil in a small pan and add in the coconut milk or cream followed by the condensed coconut. This will all melt together, then pop in the dates.
After a couple of minutes, take off the heat, cool slightly and then blend along with the sweet potato.
Add this mixture into a bowl and then add the remaining ingredients. I cheat and use an electric mixer for this stage.
You should end up with a gloopy mixture. Spoon golf ball sized dollops into paper cases in a muffin tray. You should get around nine or ten.
Bake for around 25 mins. Take out of oven and place on cooling rack.
