catch that fat

When cooking bacon, make sure you catch all that good fat as it drips. Easiest way to do this is to grill the bacon and once done, pour the fat into a small glass jar. This can be stored in the fridge (it will solidify) and used when cooking other things. I love the idea of using your own fat in your cooking. Bacon fat is especially good when stir frying leeks and greens to go with a nice piece of white fish.
