This is a good rice alternative – if you hate cauliflower then this may not be for you! But maybe give it a go as it is truly tasty and great as a meal in itself or goes well with salad or greens.
This is a recipe I got from The Autoimmune Paleo Cookbook by Mickey Trescott. It was my introduction to coconut aminos which was a game changer! Use this instead of soy sauce – it tastes amazing!
Blitz up a head of cauliflower florets in a processor, then chop or blitz up one large onion too. Sauté the onion in a large frying pan or wok and whilst that is cooking on a low heat (so not to brown it), chop up a large carrot or two, and a courgette into small squares. Add the carrot and courgette to the onion and cook for a further five to ten minutes or so. Now add the cauliflower and also a few chopped mushrooms if you fancy. Add half teaspoon of ground ginger and half a teaspoon of turmeric. Finally add one to two tablespoons of coconut aminos. Stir well and cook for roughly another five minutes (just make sure carrots are cooked through).
